Swizzles are named after the small multi-pronged wooden sticks used to prepare cocktails and punches throughout the Caribbean. They vary from refreshing and fruity to strong and austere. Have a discussion with your bartender to decide which swizzle would best suit your needs.

Pieces Of Eight

2 oz. Silver rum
1/2 oz. lemon
1/4 oz. lime
3/4 oz. passion fruit syrup
Build in Collins.  Swizzle.  Garnish with fresh passion fruit.

Queen’s Park Swizzle

2 oz. 151 demerara rum
1 lime
3/4 demerara syrup
demerara cube
Float Angostura
Muddle and transfer to a collins glass, add crushed ice and bitters. Swizzle and top off ice. Garnish with a mint sprig.
Invented at the Queen’s Park Hotel…  This drink is limited to one per guest.

151 Swizzle

3/4 oz lime
3/4 oz simple
4 dashes of absinthe
1 1/2 oz. 151 demerara rum
Top with Crushed ice. Swizzle.  Grate Nutmeg.  Garnish with cinnamon stick.

Negroni Swizzle

1 oz Beefeater gin
1 oz Sweet Vermouth
1 oz Campari
1 oz Soda
Pinch of Salt
Build in a Collins glass. Swizzle until frosted on the outside of the glass.
Garnish: orange

Bermuda Swizzle

1 1/2 oz Gosslings Black Seal
1/2 oz Lime juice
1/2 oz Pineapple juice
1/2 oz Velvet Falernum
1/2 oz Simple Syrup
Swizzle with crushed ice in a collins glass
Top with Angostura bitters float
Garnish: pineapple stick

The Spiced Duke Swizzle

2 oz. Spiced rum
1 oz. Passion fruit
1/2 oz. Honey
1/2 oz. Falernum
1/2 oz. Lime
Build in tiki mug. Add crushed. Swizzle.
Variation on the Duke’s Pearl.

2 oz. Spirit
3/4 oz. Lemon
3/4 oz. Cointreau, Falernum or Curacao
Fresh fruit
Build in Collins (except spirit). Muddle fruit. Swizzle.  Float Spirit.

3/4 oz. Lemon

Fresh fruit
Build in Collins. Muddle fruit. Swizzle.
Float bitters.
