Mai Tais

A Trader Vic classic, this cocktail has been embraced and re-interpreted by many. Ours is a blend of Jamaican rum, overproof demerara rum, lime juice, house-made orgeat and curacao with a gentle float of demerara rum. Mai Tai is Tahitian for "the very best".

Kon-Tiki Mai-Tai

1  oz dark Jamaican rum
1  oz light Puerto Rican rum
1/2 oz fresh lime juice
1/2 oz fresh orange juice
3/4 oz. honey
1/4 oz ginger syrup
4 dashes of Pernod
dash Angostura
Build into a double old-fashioned glass. Fill will more crushed ice and garnish with a sprig of mint.

Cuban Anole

1/2 oz. Rhum agricole
1/2 oz. Appleton VS
1/2 oz. Coruba
1/2 oz. orgeat
1/2 oz. cinnamon syrup
3/4 oz. lime juice
Build in Mai Tai glass.  Top with crushed ice.
Garnish: grated cinnamon

Painkiller Mai Tai

3/8 oz. house-made orgeat
3/8 oz. house-made curacao
3/4oz. fresh lime juice
3/4 oz. Appleton V/X Jamaican rum
3/4 oz. Rhum Agricole (Rhum JM will do just fine)
1/4 oz. Lemon Hart Demerara rum (overproof)
Crushed ice.  Dry Shake.  Top with crushed.  Float overproof.
